This is definitely one of those “almost too easy to call it a recipe” recipes. Just the tiniest bit of work (most of which is relegated to the oven and the blender) yields a super tasty, super nourishing little snack! These are perfect as a little appetizer, a dinner side, after school snack, or as a key player in your Super Bowl snackabrations!
The turmeric almond butter dipping sauce was inspired by one of my all-time favorite salad dressings from Trader Joe’s. Super simple ingredients are all blended together to yield a creamy, flavorful sauce for dipping, drizzling, salad dressing-ing, or whatever your heart desires! Whenever I have a batch of this hanging around, I drizzle it on nearly every single dinner dish.

Crispy Carrot Fries with Creamy Dipping Sauce
(GF, DF, PALEO, EGG-FREE, GRAIN-FREE)
Makes approx. 4 cups fries, feeds 1-4 people
Ingredients:
10 large carrots
2-3 Tbs avocado oil, coconut oil, or ghee
1/2 tsp garlic powder
cracked black pepper
Almond Butter Sauce:
1/3 cup almond butter*
1/2 tsp dried turmeric (or 1 Tbs fresh, grated)
1/2 tsp smoked sea salt (regular is fine, too)
cracked black pepper
2 fresh garlic cloves
1 tsp fresh ginger or 1/4 tsp powdered
1 Tbs lemon juice
1 cup filtered water or coconut milk (for extra creaminess, but not necessary)
*for a thicker sauce, add more almond butter. This will make it taste a little more almond-y, but it’s still wildly delicious!
Directions:
Preheat oven to 375 degrees.
Peel carrots and cut each in half at the center, then in halves or thirds lengthwise (basically, you want sizes that are approximately the same width and length for even baking. Thinner strips=crispier fries. See photo below)
On a parchment-lined baking sheet, toss your carrots with oil or ghee and spices, making sure to coat evenly. Line slices up as spread apart as possible for more crisping (if they’re just piled on top of one another they’ll steam vs get crispy)
Bake for 20-30 minutes, or until completely softened and browning nicely. Give the carrots a stir, then broil on high for an additional 2-4 minutes until extra crispy and charred in some places. This will vary based on oven temps, so just keep an eye on them and don’t fear the broiler! The crispier these get, the better.
For the almond butter sauce: Add all ingredients to a blender and blend until smooth and all ingredients are completely incorporated. Taste and adjust seasoning to suit your preference.
Serve carrots warm with your dipping sauce. Store additional dipping sauce in an airtight container/jar and drizzle on anything and everything your heart desires!
