Soft and Chewy Ginger Molasses Cookies

Warm, spicy ginger, cinnamon, and rich molasses make these the perfect winter season cookie (but really, you can enjoy these year-round!) Just a few simple, quality ingredients come together for these chewy, delectable gingery bites of joy! Blackstrap molasses is not just great for its unique, rich flavor, but it's also an excellent unrefined source of minerals and B vitamins! 

Whip up a quick batch of these sweet little nibbles and share with a neighbor or friend! They're great for cookie exchanges or just for having on hand during the influx of seasonal sweets! Not too sweet, packed with nourishing ingredients, and delectable enough that no one would suspect they might even be good for you!

Soft & Chewy Ginger Molasses Cookies

(GF, DF, Paleo, Egg Free)

Makes approx. 18 small cookies

 

Ingredients: 

Directions: 

  1. Preheat oven to 350 degrees. 
  2. In a medium bowl, whisk together almond flour through coconut sugar (including peptides if using). 
  3. Make a small well in your dry mixture and add milk, ghee, molasses, and vanilla. Using the back of a spoon, mix liquid ingredients together and incorporate into dry. It will seem like it won't all mix together, but it does! 
  4. Scoop dough into small balls (I use a cookie scoop like this), and roll in sugar (if using). Place evenly apart on a parchment lined cookie sheet. 
  5. Bake for 9-10 minutes. 
  6. For a flatter cookie (these will be rounded straight out of the oven), use the back of a glass (or anything flat really) and lightly flatten cookies while warm. 
  7. Enjoy and share!
