Is there anything that good chocolate can’t cure? Well, perhaps a chocolate allergy…don’t try that. But otherwise, chocolate does the body (and soul) some darn good. Go ahead and whip up some nourishing soul food with these double dark chocolate cookies. They’re grain and gluten-free, dairy-free, and they’re super FUDGY and brownie-like. Just a handful of ingredients and you’re well on your way to chocolatey bliss! What are you waiting for?!!
Paleo Double Dark Chocolate Cookies
(GF, DF, Paleo)
Makes 12-15 small cookies
1 cup almond flour
1/4 cup cacao powder
1 Tbs coconut flour
1/2 cup coconut sugar
1 tsp baking soda
1/2 tsp sea salt
2 tsp vanilla
dark chocolate chips, as many as your heart desires
Preheat oven to 350 degrees
Add all dry ingredients to a medium-sized bowl and whisk to combine.
Make a well in the center of the dry ingredients and add in milk, vanilla, and coconut oil/ghee and stir well to combine.
Stir in your chocolate chips.
Using a small cookie scoop or just a good ol' fashioned spoon, drop dough onto a parchment or Silpat-lined cookie sheet. Bake for 10-12 minutes
Enjoy! Store in an airtight container at room temp or in the fridge.
As always, cookies are great for gifting or bringing to potlucks and shindigs, but NOBODY will judge if you just whip up a batch for you and you alone ;)
