Super Simple Orange Chicken
Dinners for me have to encompass a few core things:
1) They have to be easy and come together quickly,
2) They have to be full of nutrients, variety, and quality ingredients, and
3) they have to be DELICIOUS!!
This recipe hits on all the high points, and then some. It's incredibly easy to throw together, full of flavor, and features simple, quality ingredients--and none of the junk (think MSG, refined sugar, processed soy) of the standard Chinese orange chicken takeout meal. All wins! Snag the simple ingredients to throw this super tasty meal together and get to cookin'!
Ingredients:
- 4 pastured chicken thighs (can also use chicken breasts, but thighs stay moist and flavorful)
- 2.5 Tbs organic sugar free orange jam
- 2 Tbs coconut aminos
- 1 tsp sesame oil
- 2 Tbs olive or avocado oil
- 1 tsp smoked sea salt
- 1 tsp dried ginger or 2 tsp fresh
- 1/2 tsp garlic powder or 1 tsp fresh
- freshly cracked black pepper
- optional: chopped fresh chives and sesame seeds for topping
Directions:
- Preheat oven to 350 degrees.
- In a small baking dish, whisk together jam, aminos, sesame oil, and spices. You can also mix this together in advance and marinate the chicken for longer if desired.
- Drizzle in olive or avocado oil slowly while whisking to incorporate.
- Add chicken thighs to baking dish, tossing to coat.
- Bake for 20-30 minutes, or until internal temp reaches 165 degrees.
- Top with chopped chives and sesame seeds (if using), and serve with white rice or cauliflower rice, additional veggies (like my orange bacon Brussels sprouts), and devour!
