Dark Chocolate Cherry Almond Cookies (GF, DG, Egg-free, Paleo)

Recently I decided to try a new coconut ice cream flavor: Cherry Amaretto. It always struck me as an older person flavor, and I mean that with the utmost respect, so I’d never tried it before. When I finally did, my tastebuds were like “why have you been holding out on us?!” Rich almond flavor, delectable juicy cherries…it left me inspired, to say the least, and that’s how these cookies were born!

These cookies are the same basic recipe as my classic Easy Chocolate Chip Cookie, just with a different flavor profile. You still get all the ease of the original recipe, just with bonus flavor! Scroll on down for the recipe and bake up some tasty goodness!

Dark Chocolate Cherry Almond Cookies

(gluten-free, dairy-free, egg-free, Paleo)

Makes 12

Ingredients

Directions:

  1. Preheat oven to 350 degrees

  2. Add all dry ingredients to a medium-sized bowl and whisk to combine.

  3. Make a well in the center of the dry ingredients and add in milk, vanilla, almond extract, and oil/butter/ghee and stir well to combine. This dough is stiffer and can take a little bit to come together, but I assure you it will!

  4. Stir in your chocolate chips and chopped dried cherries.

  5. Using a small cookie scoop or just a good ol' fashioned spoon, drop dough onto a parchment or Silpat-lined cookie sheet. Bake for 10-12 minutes or until golden brown.

  6. Enjoy! Flavor intensifies as these cool. Store in an airtight container at room temp or in the fridge.

The future is cookies, friends! And the best part is, with these gluten-free, grain-free, dairy-free, and egg-free bad boys, they can be enjoyed by all, food sensitivities or not!
